Summer Pasta Sauce

You might find the courgette plants in your Edible Playground are working overtime, producing loads of fruits that you have to keep on picking. Also, if you’re really lucky, you could have a glut of tomatoes – and one way to use both of them up is to make a lovely, simple pasta sauce.

Ingredients


Serves four:
2 large courgettes (about the size of a banana)
Lots of chopped-up fresh tomatoes, or a tin of chopped tomatoes
2 cloves of garlic
Olive oil
Cream
Herbs e.g. oregano, rosemary, basil
Parmesan
Pasta – enough for everyone

01Grate the courgettes with a cheese grater, and chop up the garlic.
02Heat some olive oil in a large pan and add the courgettes and garlic, letting them cook for a few minutes.
03Add the chopped tomatoes and herbs (but not basil, which you should add at the end instead), stir, and let them cook down for 30-45 minutes.
04Boil some water for the pasta, then turn off the sauce and add a little cream.
05Toss the pasta in the sauce and serve with fresh basil, ground black pepper and grated Parmesan.
