Whatever-you’ve-grown Stir Fry

There could be plenty to harvest in your Edible Playground and this is a good way to get everything into one tasty dish. Children can prepare the ingredients and have the adult cook them up in the wok or large frying pan. Just think about all the goodness you are getting with every mouthful!

You can also cook some noodles (if you buy egg noodles makes sure no-one has an allergy to eggs) to serve with the vegetables.

Ingredients
You can use any of the following:
Vegetable oil
Onions or spring onions - peeled and sliced thinly
Garlic - chopped or crushed up into small pieces
Carrots
Celery
Courgettes
Leeks
Baby sweetcorn - halved
French beans - cut into 3cm bits
Runner beans - cut into thin strips
Mushrooms - cut into quarters
Red and green peppers - sliced
Mange tout peas – these can go in whole
Fresh chunk of ginger – chopped into tiny pieces
Soy sauce

01Children can be divided up into pairs for the task of peeling or washing and
chopping up the vegetables. An adult may need to show how to prepare them for
chopping. For instance cut the carrots, celery, courgettes, red and green peppers into long thin strips (julienne strips). A clever trick to clean leeks is to cut a cross about 4cms into the green end. Then dunk this end in a glass of water, this will allow the grit and soil to wash out from all the layers before slicing.
02Put each chopped vegetable in its own dish. To make sure all the vegetables keep their goodness and crunch, the hardest vegetables should go into the pan first and the softest last.
03If you’re cooking noodles, cook them and drain them before you start cooking the vegetables.
04Heat oil in the wok, add the ginger and the garlic. Fry for one minute.
05Then add the carrot, celery, mange tout peas, beans and sweetcorn and cook for about 2 minutes.
06Then add the peppers and cook for another 2 minutes.
07Finally add the courgettes and mushrooms and a couple of tablespoons of soy sauce, add the noodles if you’re using them, mix up and serve.
08If you try to eat this with chopsticks it will last much longer and you’ll all be laughing too!
