These healthy little fritters will be even more satisfying to cook and eat if you’re using cauliflower and herbs from your Edible Playground. There’s lots of preparation for small hands - measuring, chopping, using a pestle and mortar and a grater, but frying should be closely supervised by an adult.
The recipe makes about 6 fritters and uses half a cauliflower.
Ingredients

1 teaspoon of cumin seeds
1 teaspoon of coriander seeds
Good pinch of salt
½ teaspoon of ground turmeric
½ teaspoon of ground ginger
1 clove of garlic chopped finely
2 ½ tablespoons (30 grams) of chickpea
or gram flour
250 grams (or about half) a cauliflower
1 small egg
½ tablespoon of finely chopped parsley
1 ½ tablespoons of vegetable oil
8 mint leaves
3 tablespoons plain yoghurt
01Put a baking dish to warm in the oven.
02Heat a small frying pan and toast the cumin seeds – don’t let them burn - they are ready when you can really smell them.
03Put a teaspoon of oil in the frying pan and cook the chopped garlic until it is clear.
04Tip the cumin into a mortar, then toast the coriander seeds and grind them all together with the pestle (and a bit of elbow grease) into a gritty powder.
05Tip spices into a mixing bowl then add the salt, turmeric, ginger and chickpea or gram flour and garlic.
06Chop parsley finely and add to other ingredients.
07Cut the cauliflower (include the stem) into big chunks and grate (using the biggest hole of the grater) onto a clean tea towel. Over the sink squeeze the cauliflower through the tea towel to take out as much of the liquid as possible. Add the cauliflower to the mixing bowl.
08Beat the egg in a cup and add it to the mixture, if possible do this a little at a time as you don’t want the mixture too wet.
09Using your hands, shape the mixture into small balls about the size of a big strawberry.
10Chop the mint finely, put it in a small bowl with the yoghurt and mix up.
11Fry the fritters in a frying pan, in hot oil (cook in batches of 6 – the pan shouldn’t be full) until brown on both sides. Put them in the oven to keep warm until everyone’s fritters are cooked and you can sit down to enjoy them.
