Runner Beans In Tomato Sauce

Pick tender young beans and your own herbs to make this simple sauce – it’ll be zinging with all the fresh flavours, and you can eat it with baked potatoes, pasta, couscous or rice. If you have plenty of your own tomatoes use them, if not, tinned tomatoes will do. 

Ingredients
Per pair of children

4 large or 8 small tomatoes
1 small onion
1 clove of garlic
1 tablespoon of olive oil
A pinch of salt
A pinch of sugar
1 teaspoon of fresh basil (or ½ teaspoon of dried herbs)
4 or 5 runner beans

01Finely chop the onion and garlic and fry gently in a saucepan
02Finely chop the basil
03Slice the runner beans into thin slivers – lengthways if possible
04Finely chop the tomatoes and add them, along with the salt and sugar to the pan
05Cook very gently until the tomatoes start to break down and the liquid reduces (6-7 minutes or more)
06Add the runner beans and cook until they are tender. If the sauce becomes too dry, add a little water
07Finally, add the chopped herbs
