Red Cabbage Coleslaw

This cheerfully coloured vegetable is full of
vitamin C and eating it raw means you get the maximum dose to help keep the winter lurgies at bay.

Ingredients
Per pair of children
¼ red cabbage
½ carrot
2 inch piece of leek

For the dressing

1 tablespoon of natural yoghurt
1 tablespoon of mayonnaise
1 teaspoon of wholegrain mustard (optional)
 

01Peel and grate the carrot.
02Thinly slice the red cabbage.
03Cut the leek lengthways into thin strips.
04In a small bowl mix together the yoghurt, mayonnaise and if you like a bit of extra zing in your dressing – the mustard.
05Pour over the vegetables and coat well.
