Red Cabbage Coleslaw
This cheerfully coloured vegetable is full of

¼ red cabbage
½ carrot
2 inch piece of leek
For the dressing
1 tablespoon of natural yoghurt
1 tablespoon of mayonnaise
1 teaspoon of wholegrain mustard (optional)
