Raspberry Delight

If you have autumn fruiting raspberries you should be enjoying them by now. You can also use any other soft fruit (strawberries, blueberries etc) for this recipe.

Ingredients

Greek yoghurt
Whipping cream
Caster sugar
Meringues

01Whip the cream with a sprinkling of caster sugar.
02Put the meringues in a plastic bag and crush into lumps with a rolling pin or jam jar.
03In one large glass bowl (or individual glass dishes), spoon in a layer of Greek yoghurt, a layer of raspberries and a layer of whipped cream.
04Top with crushed meringues.
