Mini Dorset Apple Cakes

There are apples everywhere so even if you haven’t got an apple tree at school there are bound to be pupils or friends of the school who’d love to give you some. For this recipe its best to use cooking apples such as Bramleys if they are available.

Edible Playgrounds began in Dorset so why not get a taste of the county with this recipe. Traditionally though the cake doesn’t have lemon zest or sultanas and you can leave them out if you want. However lemons are fun to zest and both ingredients do make the cake extra tasty. Children may need help cutting the apples and also with using the oven.

Ingredients
per pair of children
4 heaped tablespoons (90gms) of flour
2 tablespoons (40gms) of butter -
plus a little for greasing the tray
1 teaspoon of baking powder
Pinch of salt
2 tablespoons (40gms) of sugar
1 cooking apple
Zest (yellow rind) of one lemon
2 tablespoons of sultanas
1 free range egg
1 apple

You’ll need
A tart tray – non stick is ideal

01Put the flour in a bowl with the butter. Chop the butter into small bits and then rub it into the flour with the end of your fingers, the palms of your hands should stay clean! You’ve finished when the contents of your bowl look like fine breadcrumbs.
02Add the pinch of salt and baking powder to the buttery flour.
03Peel, core and chop the apple into chunks about 3cms big.
04Using a zester or a grater (be careful not to grate your knuckles if you’re using a grater), grate the yellow rind off the lemon and into the mixture.
05Add the sultanas and the apple pieces.
06Beat the egg with a fork in a cup or bowl and stir in to the mixture. If the mixture looks too dry add a little milk.
07Grease the indentations in the tart tray using the paper the butter was wrapped in or some kitchen roll.
08Spoon the mixture into the tart tray – make sure you don’t over fill!
09Bake at 190C for 15-20 minutes or until golden brown.
