Carrot and Ginger Salad

This can be made with stored, old carrots or new spring carrots. Use bean sprouts you have sprouted yourself.

Ingredients
per pair of children

2 carrots
½ cup of bean sprouts
1 tablespoon of sunflower seeds
1 teaspoon of lemon juice
1 tablespoon of vegetable oil
1 small piece of fresh ginger

01Peel or scrub the carrots (depending whether they are old or new) and grate them into a bowl.
02Add the bean sprouts.
03Toast the sunflower seeds over a medium heat in a frying pan for 3 minutes or until they start to brown.
04Peel the ginger and rub a couple of times over the smallest holes on the grater – don’t over do it, ginger is hot!
05In a smaller bowl, mix lemon juice and oil and then combine all the ingredients
and serve.
